Man on Man, I have been on the go lately but my eating regimen is still in a good place. My desire for more vegetable is still on 100 and I have a good one to share with my friends.  I mean, who doesn't like a good vegetable roasted in a clean oven *Please clean your oven folks*.






Check out this quick and easy recipe for roasted asparagus:

Ingredients:
1 bunch of fresh asparagus
Loads of olive oil
Salt & Pepper 
Red Pepper Flakes
Fresh Rosemary

Instructions:
1. Preheat oven to 445.
2. Trim and cut off bottom tips of asparagus to your hearts desire.
3. Add Salt, Pepper, Rosemary and Red Pepper Flakes along with loads of Olive oil and toss. 
4. Place on baking pan/baking sheet and bake 15-25 minutes.
5. Remove from oven and add more seasonings.

The work day is grinding down to a close and many of us are thinking in the back of head, "What am I gonna whip up for the family tonight?".  Never fear, the food blogger is here - Wait that doesn't rhyme?

Nevertheless, check out this simple, flavorful and healthy dish that I like to call "CRACKED CHICKEN" and make no mistake - It is INSANELY good stuff. There is a catch to the type of chicken to use though.




Wait For It! Wait For It!  

That's correct - Find you some hearty and healthy leg quarters or half of an whole chicken and prep them for that hot oven. 




INGREDIENTS:
2 -3 Whole Leg Quarters or Half of a Chicken
Loads of fresh chopped garlic
Cajun Seasoning
Lemon Pepper Seasonings *Mrs. Dash works wonders*
Handful of fresh Rosemary 
Handful of Italian Seasoning
Olive Oil
4-5 Whole Red Potatoes *You can Substitute with regular potatoes as well*


PREPARATION:
1. Preheat Oven to 450 Degrees *Don't Freak out - It's gonna work wonders*
2. Heavily coat chicken with garlic, Cajun Seasoning, Lemon Pepper Seasoning, Rosemary, Italian Seasoning and Olive Oil.
3. In a large skillet, lock in the seasoning by searing the chicken on each side for 3-4 minutes per side. 
4. As chicken is in the skillet, prep your potatoes by tossing them in loads of fresh garlic, rosemary, Cajun and lemon seasonings and then place them in full sized baking dish. 
5. Remove chicken from skillet and place in baking dish on top of red potatoes and proceed to the oven for 40 - 45 minutes. It is imperative to not overcook your chicken but you do want a nice coat on the skin side. 
6. Be sure to watch your chicken and upon seeing the skin began to crack, you will note that it is close to being done.
